What can one do to ensure that the task of having lunch isn’t shuffled into the back of the queue? For one, making sure that whatever meals are chosen require little to no preparation. The kind of meals that are as easy as “open and eat” are what we are interested in for this article, and so here are a few ideas for delicious, nutritious and time efficient meals that can keep a work-o-holic from starving to death on even the busiest of days.
The Italian Wrap
This seems an obvious choice, and for good reason. Wraps are handheld, ready made meals all wrapped up in a layer of flat bread and ready to consume at a moments notice. The other advantage is that wraps can be made in so many ways that sending him off with a wrap every day can still feel like variety. There are tons of recipes out there for wraps and more being created every day, but here is one that may even make him be sure to assign some time out for lunch. You will need:
Quality sliced ham
Sliced Provolone cheese
Sliced red onions
Red wine vinegar
Salt & pepper
1 TBSP Broccoli Sprout Powder
Mix a tbsp of mayo with 2 tsp red wine vinegar and add salt and pepper. Spread the mix evenly on the flat bread. Lay the sliced meats and cheese on first, then add the lettuce, onions, and peppers. Douce the lettuce in a bit of olive oil and then splash even more red wine vinegar over that. Roll it up into a burrito style wrap, slice at an angle down the center with a sharp knife and serve. The vinegar is the flavor that ties this all together deliciously, so don’t be afraid to lay it on thick. The good thing about wraps is you can also sneak in a spoon of broccoli sprout powder for added nutrition and he’ll never even notice.
Chicken Ceasar Salad
Fresh Romaine Lettuce
Ceasar dressing (homemade or store bought)
Fresh ground pepper
Grated parmesan cheese
All purpose flour.
In a mixing bowl, combine 1 cup flour, 1 tbsp dill, 1 tsp rosemary and 1 tsp oregano. Use plastic wrap to wrap the raw chicken breast and pound thin with a meat tenderizer. Rinse the chicken breast with cold water and dredge in the flour. Heat some olive oil in a pan and add the chicken once hot. About half way through cooking, sprinkle the Worcestershire sauce over the chicken and let evaporate in the pan. Slice in long sections and set aside.
In another bowl, add the lettuce, sliced onion, peppers and toss with the salad dressing. Lay the slices of chicken on top, sprinkle parmesan, salt, and pepper. If you need this to last longer, you can instead leave the dressing out and serve in a side container so as to keep the lettuce from becoming soggy.
1 cup quinoa, rinsed
4 tablespoons olive oil
2 cup frozen whole kernel corn, thawed
2 cup frozen shelled edamame, thawed
1/2 cup cilantro, chopped
1 cup cherry tomatoes, halved or quartered
1/2 cup lime juice
This one is very straightforward. Prepare the quinoa by boiling 2 cups of water, adding the quinoa and reducing the heat to a simmer. Cover the pot and let it sit for about 15 minutes. Once that’s done, drain it and add it to a bowl. Mix the rest of the ingredients in and that’s it!
